Roasted Asparagus by Allen Neighborhood Center

Inspired by Milk Street: The New Rules

Ingredients

Full share Veggie Box asparagus, washed and completely dried, woody bottom section removed (about 1-inch) About 1 tablespoon oil (double check the smoking point) Salt and pepper to taste (about 1/4 teaspoon)

Instructions

Preheat your over to 475 degrees Fahrenheit. Spread your asparagus into a single layer on a baking sheet (or two, if needed), toss with oil, and sprinkle with salt and pepper.



Cook for 10-12 minutes without stirring.



You can choose to enjoy as is, or sprinkle with parmesan and lemon juice.
