Ingredients
1 cup uncooked white long-grain rice
5 cups Water
1/2 cup milk
1/2 tbsp vanilla extract
12 tbsp ground cinnamon
2/3 cup white sugar
Or less, it will be very sweet.
Instructions
Prepare the Rice Base:
Rinse the rice under cold water until the water runs clear.
In a large bowl, combine the rinsed rice with 2 cups of water. Cover and let it soak at room temperature for at least 4 hours or overnight for the best flavor.
2. Blend the Mixture:
Transfer the soaked rice and its soaking water into a blender.
Add an additional 1 cup of water to the blender.
Blend on high speed for about 2-3 minutes until the rice is finely ground.
3. Strain the Liquid:
Using a fine mesh strainer, cheesecloth, or nut milk bag, strain the blended mixture into a large pitcher or bowl. Discard the rice solids.
4. Add Flavorings:
Mix in the remaining 2 cups of water, milk, vanilla extract, cinnamon, and sugar. Stir well until the sugar is fully dissolved.
Taste and adjust the sweetness or cinnamon to your preference.
5. Chill and Serve:
Refrigerate the horchata for at least 1 hour to allow the flavors to meld and serve chilled over ice.
