Instructions
1. Shell fava beans from the pods. Leave the tender inner skin on the beans.
2. Boil a little water in a pot, enough to cover the shelled fava beans.
3. Put the beans in the pot to boil for 3-4 minutes, longer for larger beans and shorter for smaller. More mature beans that are turning yellowish take more time, the tender bright green ones less.
4. Drain the beans and immerse in cold water so they are no longer cooking and are not hot to the touch.
5. Place the beans in a shallow bowl large enough to hold the beans, sprinkle with salt, shell the tender skin with your fingers, and enjoy! This is a typical bar snack in Japan. I loved them as a kid and still do today.
