Cucumber Radish Salad by Allen Neighborhood Center

Ingredients

Full Veggie Box share of cucumbers Full Veggie Box share of radishes 2 Veggie Box scallions, thinly sliced 1 tbsp. fresh dill, roughly chopped 2 tbsp. olive oil 1 ½ tbsp. lemon juice (from half a lemon) Salt and black pepper, to taste

Instructions

Thinly slice the radishes and cucumber with a knife or mandoline.



In a small bowl, stir together the olive oil, lemon juice, salt, and pepper.



In a medium mixing bowl, add the cucumber, radishes, green onion, dill, and dressing. Stir to combine.



Transfer the salad to a serving bowl and sprinkle a little extra salt and pepper, if you'd like.
