Morning Glory Muffins by Kathi

Ingredients

4 carrots, grated 1 teaspoon grated orange peel 1 1/4 cup whole wheat flour 1/2 cup white flour 1/4 cup wheat germ 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon cinnamon 2 large eggs 8 ounces yougurt 1/2 cup honey 3 tablespoons vegetable oil 1/2 cup raisins 1/2 cup pecans

Instructions

Heat oven 350 degrees

Grate carrots & orange peel
Mix with belated eggs, yogurt, honey & oil

Combine flour, whole wheat flour, wheat germ, baking soda & baking powder, cinnamon.

Stir yogurt mixture into dried ingredients until it is just moistened.
Do not mix too much, add raisins & nuts.

Pour into greased muffin cups.

Bake at 350 degrees for 20 minutes
