Mexican Street Corn (Cathy) by cpeirson

Ingredients

3-4 c fresh corn, cut from cob 2T mayonnaise 1/2 c Cotija cheese or Queso Fresco 2 green onions, chopped (or red onion) 1/4 c cilantro, chopped 1 lime, juiced 1/2 t smoked paprika 1/2 t garlic powder s&p to taste extra crumbled cheese and cilantro for serving

Instructions

In a large mixing bowl, combine mayo, cheese, onion, cilantro, lime juice, and seasonings. Add corn and mix thoroughly.

Chill in frig a couple of hours before serving.
