Quiche Cups by cpeirson

Ingredients

1 Puff Pastry, cup into 6 pieces 6 slices bacon, cooked 1/2 cup chopped green onions, optional salt and pepper to taste 1 pinch cayenne pepper, or more to taste 8 eggs 1 ½ cup heavy cream 1 teaspoon chopped fresh thyme 8 ounces shredded Swiss cheese

Instructions

1. Preheat oven to 350 degrees.
2. Spray a Large 6 cup muffin tin with cooking spray.
3. Lay pieces of puff pastry in each well. Press down so it lays nicely in the well.
4. Whisk eggs, cream, thyme, salt and pepper together in a large bowl.
5. Sprinkle the bottom of each puff pastry well with bacon, onion and cheese. Pour the egg mixture in next add another layer of the bacon, onion and cheese. Pour in remaining egg mixture and top with remaining bacon and cheese.
6. Bake in preheated oven until browned and set and no longer jiggly in the center, 20-30 minutes. Allow to cool slightly before serving.
