Cathy's Street Taco's by
Ingredients
Seasonings for pork:
• 1 small pork shoulder (3-4 lbs)
• 1 t fresh cracked pepper
• 1 t sea salt
• 1 t garlic powder (or 1 clove minced fresh garlic)
• 1 t adobo seasoning (or equivalent)
• 1 t smoked paprika
For serving:
• Street tacos
• 1 jar green enchilada sauce (med heat)
• Shredded lettuce
• Chopped onion
• Chopped tomato
• Your fav taco sauce
• Guacamole
• Mexican cheese (crumbled)
• Sour cream
• Slices of fresh lime
Instructions
Preheat oven to 250. Set a wire roasting rack in a foil lined 13x9 pan. Mix all seasonings together and season pork liberally on all sides. Place pork on rack and cover with foil. Roast until you can easily pull apart the meat by twisting with a fork ; 6-8hrs.
Remove pork from oven and let sit for at least 20 min or up to 2 hrs.
Preheat oven to 500. Put the pork back in the oven to let the skin puff and get crispy, rotating every 5 min. When pork is crispy on all sies (@20 min) remove from oven and let sit for 20 min. Shred pork and toss in the green enchilada sauce. Mix thoroughly and keep warm.
While pork is crisping, lightly sear each street taco in a skillet; keep warm.
Layer tacos with meat...and all your favorite toppings. YUM!
