Garlic Aioli by Emi

It’s not like out of this world great, but it is yummy and the family enjoyed it quite a bit served with roasted potatoes and breaded chicken.

Ingredients

- 1-2 cloves garlic, finely minced or grated - 1 large egg yolk - 1/2 cup neutral oil (grapeseed, avocado, or light olive oil) - 1 tsp lemon juice - 1/2 tsp Dijon mustard (optional) - Salt to taste

Instructions

1. Mince garlic into a paste or grate it finely.
2. In a bowl, whisk egg yolk, garlic, lemon juice, and Dijon mustard.
3. Slowly drizzle in oil while whisking continuously to emulsify.
4. Season with salt to taste and adjust lemon juice if necessary.
