Ingredients
-½ cup butter
-1 cup plus 1 teaspoon sugar
-2 eggs
-1 cup flour
-1 teaspoon baking powder
-1 ¼ lbs. plums, quartered
-1 tablespoons lemon/lime juice
-1/8 teaspoon ground cinnamon
Instructions
1. Preheat over 350. Butter 9 inch spring form pan.
2. Combine butter and 1 cup sugar until well blended, then beat in eggs, followed by the flour and baking powder.
3. Beat to mix well and turn into prepared pan.
4. Place plum quarters on top of batter close together in circles starting on outside in a flower pattern.
5. Sprinkle with lemon juice.
6. Mix cinnamon with remaining sugar and sprinkle on top.
7. Bake on center rack 30-40 minutes or until cake tester comes out clean. Serve warm with ice cream or cold.
