Ingredients

110g salted butter 175g white sugar 2 eggs 135g corn meal 1.5 tsp baking powder (about 5.5g) 0.75 tsp salt (about 2g) 190g all purpose flour 280g whole milk

Instructions

pre-heat oven to 400*F
place 10" round cast iron dutch oven in pre-heating oven

cream butter and sugar
add eggs, one at a time
in separate bowl, combine corn meal, salt, and baking powder
add corn meal mixture to creamed batter
alternate adding flour and milk (about half of each at a time)

remove cast iron from oven
turn oven down to 350*F
heavily butter the cast iron
add batter to cast iron

bake at 350*F for 30 minutes
or until the sides are dark brown (not burned) and the center passes the toothpick test
