Crockpot Taco-Style Shredded Lime Chicken by
Optional: Pre marinate night before and dump it all into the crockpot in the morning / afternoon, easy peasy!
This recipe is a total win because it's flavorful (in the context of this diet), super moist, simple, convenient, healthy, and can be using in multiple meals. My favorite is to put it in rice flour tortillas with a slice of avocado.
Ingredients
-2 tbsp olive oil
-2 tbsp lime juice (fresh)
-1 tsp lime zest (optional)
-1 tsp salt
-1/2 tsp black pepper
-1/2 tsp cumin
-1/2 tsp dried oregano
-Optional pinch of fresh or powdered ginger
Instructions
Optional: Pre marinate night before and dump it all into the crockpot in the morning / afternoon, easy peasy!
To make the marinade: whisk together literally all of the ingredients.
Dump everything into the crockpot and cook on low for 6-7 hours or high 3-4 hours, both are perfectly fine.
Remove the chicken when done, shred it up, and add it back to the remaining liquid in the pot. LIFE HACK: You can put your chicken filets whole into a stand mixer and mix like normal to effortlessly shred your chicken into large or very finely shredded pieces!
