Breakfast Egg Casserole by

Ingredients
10 eggs
1 teaspoon baking powder
1/2 cup flour
1/2 teaspoon salt
16 ounces cottage cheese
16 ounces Monterey Jack cheese shredded
1/4 cup melted butter
2 (4 ounce) cans chopped green chilis
Optional: Add 1/4 cup diced red pepper to add contrast and flavor.
Instructions
Preheat oven to 350 degrees.
Beat eggs until light and fluffy. Add remaining ingredients. Pour into a well greased 13 x 9 pan.
Bake in the oven for 35 minutes until top starts to brown and until the center is set. It may take a few more minutes.
