Becky's Chocolate Fudge by 7heather

Ingredients

2 cups of sugar 12 marshmallows or 120 (2 cups) small marshmallows (dust off corn starch when using mini marshmallows) (1/2 cup mini = 4 large) 2/3 cup milk 1 stick of butter 6 oz. semi-sweet chocolate chips (1/2 of regular sized bag) 1 cup of nuts (if desired) 1 tsp. vanilla

Instructions

Spray an 11x7" or similar sized pan with non-stick cooking spray or butter the pan.

Mix in heavy 2 qt. or larger saucepan (with thick bottom): sugar, marshmallows, milk, butter.

Bring to boil over medium heat (5 or bottom of knob, turn up to 6 during the 5 minutes of boiling for harder fudge). Let boil 5 minutes, stirring constantly so it doesn't stick or burn. (Cook less for a grainier texture)

In microwavable (glass) bowl, melt chips in microwave per instructions on chip bag. For regular chips, microwave for 1 minute on 70% power. For mini-chips, microwave for 1 minute on 100%. Morsels may retain some of their original shape. If needed, microwave at additional 10-15 second intervals, stirring just until morsels are melted.

Take off heat. Add semi-sweet chocolate chips or melted chocolate. Stir until melted/well-mixed. Add cup of nuts and tsp. vanilla and mix well.

Pour in buttered pan.
