High Protein Creamy Truffle Pasta by TessaBettano

Ingredients

250 g dry high protein pasta 1/2 LB raw chicken tenders 1 c heavy cream 1 TBSP dijon mustard 1-2 TSP truffle oil 3 cups shredded sharp cheddar cheese 1 package spinach salt and pepper

Instructions

1. cook pasta according to package (cook 1-2 min less than package says so the pasta does not get mushy)
2. season chicken tenders with salt and pepper and spray a medium skillet with cooking spray. Cook until golden brown and cooked through. remove from heat.
3. In a medium-large skillet over medium heat, heat heavy cream, mustard, and truffle oil. Add in cheese one handful at a time, stirring in between each, and stir until melty and totally incorporated. season with a little salt and pepper.
4. Pour pasta into sauce and toss until combined
5. serve pasta with chicken on top. I also served mine with a generous portion of steamed spinach for extra fiber and veggies!
