Foul (Fava Beans) with Egyptian Mix by Matbakh

Ingredients

2 cups prepared Foul Mudammas (ready-to-eat stewed fava beans) 2 tablespoons vegetable oil or olive oil 3 cloves minced garlic 1 tomato, chopped (or minced) 1 teaspoon cumin 1 teaspoon vinegar Juice of half a lemon Chopped chili pepper (optional) Salt to taste Chopped parsley for garnish

Instructions

In a pot over medium heat, heat the prepared Foul Mudammas with a little water until it is completely hot.
In a small pan, heat the oil and add the minced garlic until it is lightly browned.
Add the chopped tomato, cumin, chili pepper, and salt, and let the mixture simmer (or reduce) for a few minutes.
Add the vinegar and lemon juice and stir well.
Add this mixture (the Kholta) to the fava beans (Foul) and stir until the mixture is uniform.
Serve the Foul in a serving dish with a sprinkle of parsley and olive oil on top.
