Grandma Kurschat's Famous Bean Soup by robinnelson

Ingredients

Ham bone + ham cut up 1/4 C chopped onion 8 to 10 cups water 2 cups dry navy beans 1 bay leaf 3 whole peppercorns 3 whole allspices 1 medium potato (peeled and diced)

Instructions

-Long Method-

Wash and soak beans overnight
Next day put ham bone and cup up ham in large kettle
Cook slowly 4 to 5 hours

-Short Method-

Use cooked leftover bone and ham + potatoes
Simmer 1/2 an hour. Add 2 cans of white navy beans
Simmer 2 hours or longer
Be sure potatoes are done
Just before serving, brown 2 T flour in 1 T butter
and add to soup to give it that old fashioned bean soup taste.


NOTE
2 C dry split peas may be used instead of beans (cook according
to directions on package)
