Sun-Gold Potato Salad by
Ingredients
15 red potatoes
1 T grated onion
1 t dry mustard
1 C chopped gr. pepper
1 C chopped celery
1/3 C oil
2 t salt
1/8 t pepper
3 T vinegar
1 t basil
6 hard cooked eggs
1 C chopped red pepper
1 C mayonaise
1/4 C milk
Instructions
Cook potatoes in boiling salted water in large pot 45 minutes or til done, drain. Peel while still warm, cut into small cubes. Place in very large bowl. There should be 12 Cups. Combine salad oil, vinegar, onion, salt, basil, mustard, & pepper in a 1 C measure. Pour over potatoes, toss lightly til dressing is absorbed.
