Crust-less Quiche by
Ingredients
1/2 cup 2% Evaporated Milk
6 large/medium Eggs
1 tablespoon pesto
1 package chopped frozen spinach (thawed and squeezed dry)
1 medium red pepper - chopped
2/3 cup crumbled feta cheese
1/2 cup grated aged white cheddar cheese
Instructions
Preheat oven to 450 (F). Wisk together the Milk, Eggs, Pesto. Add the spinach, pepper, cheeses. Bake for approximately 25 minutes in a glass pie plate.
