Charred Sweet Corn Salad With Chile & Lime by Emi

Ingredients

-4 ears of corn, husked -Kosher salt and freshly ground black pepper to taste -2 tbsp fresh lime juice, plus more to taste -1 tsp chipotle chile powder -1 cup cherry tomatoes, halved -1 jalapeno, seeded and minced (Carefully! Or your fingers will be tingly with spice for hours on end) -1/3 cup chopped fresh cilantro leaves -[Optional] 2 ox cojita cheese crumbled, 3 green onions

Instructions

1. Char your husked corn cobs on a grill or, if no grill is readily available, by roasting one cob at a time over the flames of a stove.

2. Cut corn off of the cob and add it together with all of the other stuff.

Tip: Pairs well eaten with meat and/or cheese
