Ground Beef Enchilada Casserole by MANDIOLIVO7

Ingredients

2 lb ground beef 1/2 white onion, diced 2 tbsp taco seasoning (1/2 packet) 2 cans red enchilada sauce - 10 oz each 15 corn tortillas 8 oz cheddar cheese (shredded) fresh cilantro (chopped)

Instructions

Preheat oven to 350 degrees
Brown meat with diced onion and taco seasoning in large skillet over medium-high heat, until browned and onions are soft (approx. 5-6 min)
Pour approx. 1/3 C of enchilada sauce in the bottom of a 9x13 pan.
Layer tortillas on top of the enchilada sauce. (can tear to fit)
Top with approx. half the meat mixture, approx. 3/4 C of red enchilada sauce and 1/2 C of shredded cheese.
Repeat these layers a 2nd time in pan.
Top with more tortillas, the remaining enchilada sauce and shredded cheese
Cover pan with foil and bake for 20 minutes. Uncover and bake for additional 5-10 minutes.
Let casserole sit at room temp for 5-10 minutes, top with cilantro.
