Fresh Salmon Cakes by Monath1

Ingredients

***1 lb fresh salmon flaked***** or 1 (15oz) can of salmon 3/4 c. saltine cracker crumbs 1 egg, slightly beaten 2 tbsp. chopped onion 3 tbsp. milk 1 tbsp. fresh lemon juice 1 tbsp. butter 1 tbsp. olive oil Fresh dill or basil Combine all ingredients, except butter and olive oil. Blend well. Shape into cakes (flat); melt butter & olive oil in skillet, saute on both sides until golden brown. Add more butter, if needed. Top with either fresh dill or basil.

Instructions

*****If using fresh salmon 1st put the salmon steaks into the rack of a steamer. Place the rack over boiling water and cover closely. Let steam 7 minutes. When fish is cool enough to handle, remove and discard the skin and bones. Flake salmon into bowl.*****
