Braised Korean-Style Spinach by
Optional: Slice the spinach into smaller pieces, some people find this easier to eat since the spinach can be chewy.
Ingredients
1 lb (about 450g) fresh spinach (washed and tough stems removed)
1 tbsp sesame oil
1 tsp rice vinegar (optional)
1 tsp toasted sesame seeds
Pinch of salt
1/2 tsp grated ginger (optional for flavor)
Instructions
1. Blanch the spinach: Bring a pot of water to a boil. Add the spinach and cook for 1-2 minutes until wilted.
2. Drain and rinse with cold water to stop cooking. Squeeze out excess water.
3.Optional: Sauté: Heat sesame oil in a pan over medium heat.(You can skip this step and just mix in the rest of the stuff with the spinach)
4. Add the blanched spinach and stir to coat it with the oil.
5. Season with salt and ginger (if using), and add a splash of rice vinegar (optional).
6. Let it cook for about 5 minutes, stirring occasionally to combine the flavors.
7. Garnish: Top with toasted sesame seeds for a nice crunch.
