Lime Cilantro Rice by
Ingredients
-1 1/2 cups dry white rice (preferably long-grain like jasmine or basmati)
-1/4 cups water (or follow your rice package instructions)
1 bay leaf (optional, but adds depth like Chipotle's)
1/2 tsp salt
1 tbsp neutral oil or ghee (clarified butter) (like avocado oil)
After cooking:
2 tbsp fresh lime juice
1 tosp fresh lemon juice (balances the lime)
1/3 cup chopped fresh cilantro
1/2 tsp salt (or to taste)
Instructions
1. Rinse the rice in a fine mesh strainer until the water runs clear. This removes excess starch for fluffier rice.
2. Cook the rice using your preferred method:
• Stovetop: In a pot, bring water to a boil. Add rice, salt, bay leaf, and oil. Stir once, cover, reduce heat to low, and let simmer for 15-18 minutes until water is absorbed. Remove from heat and let sit for 5 minutes.
• Rice Cooker: Add rice, water, salt, bay leaf, and oil. Cook according to your rice cooker's settings.
3. Fluff the rice with a fork and remove the bay leaf.
4. Mix in the flavor: Stir in lime juice, lemon juice, and chopped cilantro. NOTE: Wait until rice isn't too hot, or your cilantro will wilt.
Adjust salt if needed.
