Ingredients

Sauce: 1 cup hoisin sauce 1/4 cup soy sauce 1/4 cup sherry wine 3 T red wine vinegar 1-2 T chili garlic sauce 1/4 cup sugar 2-3 cloves garlic, minced 1/4 tsp red pepper flakes . Batter: 1/4 cup flour 1 cup rice flour 1/2 tsp salt 1/2 tsp pepper 1 cup cold water . Other ingredients: 1 lb chicken, cut into 1-inch pieces 1/4 cup rice flour 1/2 cup cashews 1/2 cup green onions, chopped Peanut oil Sesame seeds White rice

Instructions

First, mix together all ingredients for sauce and set aside. Mix together dry batter ingredients and then add water to make batter. Coat chicken in rice flour and then in batter. Heat oil over medium-high heat and cook chicken in batches until golden brown. In large skillet or wok, add cooked chicken pieces. Add sauce and cook on medium heat until heated through. Add cashews and green onions. Serve over rice and garnish with sesame seeds and green onion.
