Rice / meatballs crockpot by maggiemurraycreates

Ingredients

1/2 cup jasmine rice 1/2 cup coconuts milk 1/2 water 12 beef meat balls 1 cup mixed frozen vegetables 1 cup celery chopped 1/8 tsp basil 1/8 tsp oregano 1/8 tsp salt 1/8 tsp pepper

Instructions

Use a small crockpot for this recipe. Or you can use a large with a smaller dish inside it.
Wash and drain rice. Chop celery into small bits.
Add rice ,coconut milk, water spices and beef meatballs and chopped celery crock pot.
Mix well. Add vegetables to a small glass bowl and set on top.
Cook on high for 4 hours low for 8 hours.
When done remove glass bowl with vegetable. Stir rice mixture.
Serves 2 add 6 meatballs per serving and half vegetables in each dish.
To make this vegetarian leave out meatballs.
This dish is also really good with hot peppers.
