Sultana Loaf by
Ingredients
117g soft light brown sugar
117g butter (softened)
2 large eggs
184g self-rising flour
1 level tsp ground mixed spice
1 level tsp ground cinnamon
117g sultanas
3 tbsp milk
Instructions
1. set the oven to 180C or gas mark 4
2. add the eggs, 1 at a time, if the mixture looks like its going to curdle add some flour when the last egg is added
3. fold in the flour, mixed spice and cinnamon, incorporating it fully, add the sultanas and enough of the milk to make the mixture a soft dropping consistency
4. bake the loaf in the centre of the oven for 1-1 1/4 hours or until a skewer comes out clean when inserted into the middle of the cake
5. remove loaf and leave on a cooling wire until cool
