Chocolate Chip Snickerdoodle by diddysinatra

Ingredients

Cookies --------- 3/4 cup unsalted Irish butter 1/2 cup white granulated sugar 1/2 cup light brown sugar 2 large eggs 1 tablespoon vanilla extract 1/2 teaspoon baking soda 1/2 teaspoon cream of tartar 1/2 teaspoon salt 2 cups all purpose flour 1 1/2 cup chocolate chips Cinnamon Sugar Mix ------------------ 1/3 cup white sugar 2 teaspoons ground cinnamon

Instructions

Pre-heat oven to 350 degrees.

Cookie Dough

Hand cream or use a mixer to combine and cream the butter and sugars. Should be well mixed/homogenous.

Separately, add one egg yolk to vanilla extract and mix. Discard the other yolk however you please.

Separately, whip two egg whites to near stiff peaks.

Separately, mix baking soda, cream of tartar, and salt.

- Combine everything so far. - Try to evenly distribute the dry ingredient mix. -

Mix in 1/2 to 1 cup of flour at a time (depending on your patience).

Add in chocolate chips.

(Optional) Refrigerate for 30 minutes or longer to stiffen the dough and improve flavor. The longer the better (within reason, ya dunce).


Baking

Combine 1/3 cup white sugar and 2 teaspoons ground cinnamon in a bowl.

Use a small ice cream scoop or a large spoon (tablespoon) to create a ball of dough and roll the cookie in the cinnamon sugar mix.

Place cookie on the tray, flatten cookie to your liking.

Repeat until you're out of dough or hit your count target.

Cook for 9-11 minutes, or until golden brown center with cooked edges
