Thick and Chewy Peanut Butter Cookies by Reqel

Ingredients

- 115G butter softened - 200G brown suger - 1 large egg - 2 teaspoons vanilla extract - 125G peanut butter - 156G plain flour - 1/2 teaspoon baking soda - 1/2 teaspoon salt - chocolate chip cookies

Instructions

Preheat the Oven: Preheat the oven to 190°C.

Cream Butter and Sugar: Using the paddle attachment, cream the butter (115 grams) and brown sugar (200 grams) together in a bowl attached to a stand mixer until light and fluffy.

Add Egg, Peanut Butter, and Vanilla: Mix in the egg until well combined. Then, add in the peanut butter (125 grams) and vanilla extract (5 ml). Mix until fully incorporated.

Whisk Dry Ingredients: In a separate bowl, whisk together the plain flour (156 grams), baking soda (5 grams), and salt (1 gram).

Combine Mixtures: Gradually add the dry ingredients to the butter mixture, mixing thoroughly until no dry flour remains.

Add Chocolate Chips: Gently mix in the chocolate chips (150 grams) by hand until evenly distributed throughout the dough.

Scoop the Dough: Using an ice cream scoop, fill the scoop until it’s full, flattening the bottom until it’s level with the straight edge of the scoop.

Place on Baking Sheets: Place rounded scoops of dough onto parchment-lined baking sheets, spacing them apart.

Bake: Bake in the preheated oven for 13 minutes, or until the cookies are golden brown all over.
