Ingredients

1/2 - 3/4 Cup Olive oil
1 tsp White pepper
1 tbsp Black pepper
1 tsp Salt
3 Garlic cloves - diced finely
5-6 lb Prime Rib cut or lean roast

Instructions

Place meat in deep pan, fat side up.
Mix seasonings together and rub all sides of the roast (puncture some holes and push in seasoning as well).
Let sit 1 hr, until room temperature.
Preheat oven to 270 C.
Roll roast in seasoning again and using string, tie up the roast to compact it; roll once more.
Place pan in oven, middle rack for 6 minutes per pound. Do not open oven.
Turn off oven and leave for 2 more hours. Do not open oven.
Remove and slice into steaks.
