Ingredients

3 1/4 to 4 1/2 C Flour
2 packages pizza crust yeast
3 teaspoons sugar
1 1/2 teaspoon salt
1 1/3 C very warm water
6 tablespoons oil
1-1/2 pounds pork sausage
1/2 package of pepperoni
1 small jar of pizza sauce or spaghetti sauce (half my family likes pizza sauce and the other likes spaghetti sauce)
3 cups of shredded mozzarella cheese
1 cup of cottage cheese
and any other pizza ingredients you like: onions, olives, mushrooms, etc..
4 tablespoons of melted butter
2 garlic cloves
1 teaspoon parsley flakes

Instructions

1. Brown pork in skillet, drain and then add sauce to it, along with any of the extra pizza ingredients you like, onions, olives, mushrooms, etc... set aside (I keep on low on the stove)
2. Mix together the mozzarella and cottage cheese together and set aside.
3. Make pizza crust: Combine 2 cups flour, yeast, sugar and salt in large bowl. Add water and oil, mix until well blended. Add enough remaining flour until soft dough ball is formed, will be slightly sticky. Knead on a floured surface add flour if needed, until smooth and elastic about 4 minutes. Break into 5 even sized ball doughs
4. Roll out each ball dough to about a plate size circle. on the front half of the circle, put about 3 tablespoons of the cheese mixture, 5 pepperonis, 4 tablespoons of the meat sauce, and top with 3 more tablespoons of the cheese mixture. Fold Circle over the filling and "roll" the edges together. Repeat for the other 4 Calzones.
5. Heat oven to 425 degrees. Place Calzones on cookie sheets or pizza pans (I oil them a little first).
6. Mix melted butter, garlic and parsley together and brush on each calzone.
7. Bake in oven for about 12 minutes or until they are as brown as you'd like them.

Makes 5 big calzones
