Homemade Chimichangas by

Makes a Great Superbowl meal and awesome for other occassions...Your gonna LOVE EM!!!! :)

Ingredients

2 Nice sized Roast Beef
3 packs of 8 Tortillas Burrito style
3 Nice sized Green Peppers
3 Nice sized Tomatoes
3 nice sized White Onions
1 Big head of lettus
1 Medium sized bag of shredded cheese

Instructions

Dice all fresh vegitables and put into seperate bowls.Slow cook Roast beef at 350 degrees in slow cooker with water up to 1/4 of the Roast Beef approxamately 8 hrs or overnight til its tender and falling apart. Scoop Roast Beef out into a big bowl and finish shredding it apart. Fill 1/4 to 1/3 of the Tortilla with the Roast beef and fold it in a 1/3, fold the ends in and finish rolling it. Do all 24 Tortillas. Put some vegitable oil in a frying pan, heat it til its hot, about 1/3 full. Fry the tortillas til light golden color on one side then flip and do other side the same, takes about 15-20 seconds a filled tortilla. Dress Chimichangas how you like and top with Salsa and Sour Cream.
