Pineapple Upside-Down Cake by

Ingredients

(bottom of cast iron skillet)
3 T butter
1 C brown sugar
1 can (15 oz.) sliced pineapples, drained

1/2 C butter
2 C flour
1/2 C milk
1 C white sugar
2 tsp. baking powder
1 tsp. vanilla
2 eggs

Instructions

Melt butter in a large iron skillet.
Spread brown sugar over butter, then lay pineapple slices - close together - over the sugar.

Cream together butter and sugar.
Separate eggs and beat yolks and whites separately. Add yolks to the sugar mixture.
Stir together flour and baking powder until it's combined - or sift.
Alternately add milk and dry ingredients to the egg yolk/sugar/butter mixture.
Add vanilla and fold in egg white.
Pour over pineapple slices in the skillet.
Bake at 350 degrees about 30 minutes.
Loosen around edges and turn out onto a large plate so fruit side will be up.
