Sweet Avo Bowl by

This is a replica of the Fresh Fin Sweet Avo Bowl

Ingredients

Shredded Carrot
Green Onion (green part)
Kale - Chopped fine in food processor
Shelled Edamame
Small Avocado - 1 per person, if large Avo 1/2 per person
Brown Rice Cooked
Sweet Potato Puree or chunks
Marinated Baked Tofu
Cilantro Lime Dressing

Instructions

Marinated Tofu: Press firm tofu and cut into small chunks.
Marinate: 1/4 cup soy sauce, 2 TBL maple syrup
Air Fry @ 360 degrees for 22 minutes

Cilantro Lime Dressing (makes enough for 4 ppl with some leftovers) 1/2 this recipe makes barely enough for 4 large bowls:
2 cup loosley packed cilantro
1 cup plain vegan yogurt
4 TBL lime juice
2-4 garlic cloves
3 tsp white wine vinegar
1/4 tsp salt

Blend till smooth in blender. Will thicken as it cools from being blended.

To make bowl start with the cooked brown rice then layer with kale, carrot, green onion, edamame, sweet potato, tofu, avocado and dressing and mix well.
