Mongolian Beef by

Ingredients

2 cups soy curls
3 TB corn starch
3 TB warm water
9 TB tamari sauce (you can use soy but I recommend tamari)
1 cup veggie broth
6 cloves garlic
1 1/2 tsp ginger
3 TB sweetener
1/2 tsp red pepper flakes

Instructions

1. Soak soy curls in boiling water for 10 minutes (or until fully re-hydrated).
2. Preheat oven to 375 degrees. Or you can use an air fryer with no preheating.
3. Drain soy curls and press all the water out of them. I usually rinse them with cold water then wring them out with my hands. You want as much water out of them as possible.
4. Add soy curls to baking pan and bake for 15 minutes, turning a few times so that nothing is sticking to the pan. I use the air fryer.
5. While soy curls are baking, mix sauce ingredients together, add to sauce pot and heat to a boil.
6. Once boiling, turn down heat and cook for a few minutes until sauce thickens just a bit. If sauce gets too thick add a bit more veggie broth.
7. Place soy curls over a bed of cooked rice then pour sauce over soy curls and enjoy!
