Banana Bran Muffins by

Ingredients

1 cup flour
1 cup oat bran
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts or pecans
1 cup mashed ripe bananas (2 large)
1/2 cup butter
1/2 cup brown sugar
1 egg

Instructions

Preheat oven to 375 degrees. In medium bowl, stir together flour, oat bran, baking soda, salt, and nuts. In separate bowl, beat bananas and butter. Add brown sugar and egg; beat until completely mixed. Add dry ingredients and stir just until blended. Spoon into greased muffin tins, filling each about three-quarters full. Bake for 15 to 20 minutes or until toothpick inserted in center of muffin comes out clean. Let cool in tins for 5 minutes before removing. Yields about one dozen.
