Mashed Potato Calzones by

Ingredients

-1 Tube of Pillsbury pre-made pizza dough
-2lbs Potatoes (I usually buy a 5lb bag of russet potatoes and use half on this recipe, 4 russet potatoes will give you more than enough)
-1 cup diced onions
-2 slice of veggie bacon (optional, you can use real bacon if you're non veggie, I use morningstar)
-1/4-1/2 cup of milk
-2-3 TBSPs Butter
-A few handfuls of shredded mozzarella
-A few spoonfuls of ricotta (optional)
Salt and Pepper to taste

Instructions

Start by making mashed potatoes
-Pre-heat oven to 450*F
-Peel and cut the potatoes into eighths
-Place the prepared potatoes in a large boiling pot of water (don't add salt to your water to get it boiling when boiling potatoes)
-Let that boil 10-15 minutes, until the potatoes are easily poked with a fork or smooshed with a spoon in the meantime you can prepare the bacon and dice your onions
-If you're using bacon, fry bacon in a small pan a few minutes each side until it starts turning brown, then take it out and lay it on a paper towel to cool
-Drain the potatoes and add milk and butter, and smash em up! Add milk as needed to get desired texture. Add your onions, salt and pepper, and crumble your bacon (I just use my hands to crumble it) in and continue smashing the potatoes until everything is thoroughly mixed
-Unroll your pizza dough onto an ungreased cookie sheet. Cut in half. (or as many calzones as you want to make if you make smaller ones)
-Plop a big ball of your tasty mashed potatoes on one side of each section of dough, you will probably have mashed potatoes left over, I usually just throw them in a tubberware to eat later. Put ricotta and mozzarella on top of the potatoes to your liking, I usually add a lot of cheese but I love cheese.
-Fold the dough over the ball of potatoes and cheese, pinch the corners together and then pull the loose corners back to the folded corners and twist them together to make sure all the potatoey goodness is locked inside
-Put the calzones in the oven for 10-12min or until golden brown (the twisty corner bits will probably brown up first, don't worry if they get a little dark!)

Serving Size: HUGE calzones which can feed 2 people over 2 days
