Almond Joy Cookies by

This is a chewy, deeply chocolatey cookie that tastes like a ground up Almond Joy.

Ingredients

3 oz semi-sweet chocolate bits
1/2 cup (1 stick) unsalted butter
1 c. flour
2 tbls. Dutch-process cocoa
1 t. baking powder
1/4 t. salt
1 c. blanched almonds, chopped finely
1 c. coconut with sugar
1 c., plus 2 tbl. sugar
2 large eggs
3/4 confectioner's sugar

Instructions

Melt chocolate and butter in the microwave and cool. Combine the flour, cocoa, baking powder, salt, and chopped almonds. Transfer the chocolate mixture to the bowl of a stand mixer. Beat a low speed just to thoroughly combine the chocolate and butter. Add the sugar and then one egg at a time, mixing well after each addition. Cover and chill dough for at least four hours.

Preheat oven to 300 degrees. Line baking sheet with parchment. Roll one inch balls of dough and then roll in confectioner's sugar. Chill the balls again for at least 25 minutes. Set them 2" apart on the baking sheet because they will spread. Bake for 15 minutes and allow to cool before placing in a tin.
