Butter Cracker Crusted Chicken by

Ingredients

4 boneless skinless chicken breasts
1 egg
16 butter crackers
4 tsp chicken demi glace
1.2 oz butter

Instructions

Preheat oven to 425F. Pat chicken breasts dry and season with salt and pepper. Place on baking sheet and brush tops with egg. Cover with cracker pieces and press to adhere. Roast to 165F (18-20 min).

Sauce:
Simmer 2 tbs water and demi glace on medium heat 2-3 min. Remove from burner and swirl in butter.
