Roasted Carrots and Potatoes by

Ingredients

2 russet potatoes
24 oz carrots

Instructions

Peel and cut potatoes and carrots to 1" pieces. Trim and thinly slice green onions--retain green portions. Toss potato and carrot on baking sheet with olive oil and pepper. Roast until tender and browned (18-24 mins).
