Ingredients

1 cup dried pitted dates
1.5 cups oats
1/4 cup nut or seed butter (I use sunflower seed butter b/c Ellie is allergic to nuts)
1/4 cup honey

OPTIONAL ADDITIONS:
chopped nuts, dried fruit, shredded coconut, chocolate chips, etc. (I usually add 1/4 cup of dark chocolate chips and a 1/4 cup of shredded coconut to mine)

Instructions

Put dates in food processor with a "sprinkling" of oats and process until the dates form a sticky ball.

Transfer dates to a large bowl and add oats and any other additions you want.

Melt honey and nut/seed butter over low heat in a saucepan until smooth and stirrable, then pour over the date and oats mixture and mix with a large wooden spoon to combine.

Line a large shallow dish with wax paper and then press the mixture down into the dish to whatever thickness you would like.

Cover and put in freezer for about 15 minutes, then you can cut them into bars and put them in a ziploc. Store in the fridge or freezer for I don't know how long, until they start to smell funky I guess, we end up eating them too fast to find out.
