Healty Cauliflower Soup with Peas by

Ingredients

1 medium onion
bunch of celery leaves
1 medium cauliflower
1 cube of vegetable stock
2 cups of frozen peas
1 tea spoon of dried dill ( 2 teaspoons of fresh dill)
1 tbl spoon of fresh parsley
1 tea spoon of dried basil
1/4 tea spoon of dried sage
1/4 tea spoon of minced coriander
2 tea spoons of butter
salt, pepper
1 garlic
5 cups of water

Instructions

Cut the onion into small pieces. Melt the butter and saute the onion till it becomes glassy. Add the celery leaves, cut into small pieces.
Cut the cauliflower into small pieces and add to the pot. Steam a little bit, add water, veggie stock, salt and cook for 10 minutes.
take off the fire and blend the soup. return back to the stove and peas, dill, parsley, basil, coriander, and sage. Cook another 5 minutes on a low fire. Press one garlic in, just before turning off the soup.
( if you like your soup more crunchy, leave 1 - 2 cups of cauliflower before mixing on the side and add back with the peas.)
