Chicken, Broccoli and Pineapple Stir-Fry by

Ingredients
2 cups MINUTE brown rice, uncooked
2 tsp. vegetable oil
1 lb. boneless skinless chicken breast cut in strips
1 medium onion, thinly sliced
1 cup broccoli, cut into florets
1 tbsp. freshly grated ginger root
2 cloves garlic, finely chopped
1 20 oz. can of pineapple chunks, drained and juice reserved
1/4 cup low sodium soy sauce
1/4 cup Kikkoman stir fry sauce
2 tbsp. cornstarch

Instructions
Prepare rice according to package directions
Heat oil in non stick large skillet or wok over medium-high heat.
Add chicken, stir fry 5-7 minutes or until no longer pink
Add onion, broccoli, ginger and garlic to skillet, stir fry 3 minutes longer.
Combine reserved juice, soy sauce, stir fry sauce and corn starch in small bowl, add to skillet. Bring to boil, stirring constantly. Add pineapple. cover, reduce heat to low and simmer 2-3 minutes more.
Serve over brown rice.
