Chicken Parmigiana in the Crock Pot by

Ingredients

4-6 chicken breasts
2 eggs
1 teaspoon salt
1 teaspoon pepper
1 cup dry bread crumbs
1/2 cup Parmesan cheese
2 tsp. oregano
1 (24-26) ounce jar pasta/marinara sauce
4-6 slices Mozzarella cheese

Instructions

Pat each chicken breast dry with a paper towel.
Optional – (pound out the chicken breasts a little bit to make them even)
In a large bowl, beat eggs, salt and pepper.
In a separate bowl mix the bread crumbs, Parmesan cheese, and oregano.
Dip each piece of chicken in the egg mixture.
Then coat each side of each chicken breast with breadcrumb mixture.
Pour 2-3 Tablespoons of olive oil in the bottom of the crock pot.
Arrange the chicken to lay evenly in the crock pot.
Lay 1-2 slices of sliced mozzarella cheese over each piece.
Evenly pour the pasta sauce over the chicken.
Cover and Cook on low 6 to 7 hours.

This is so easy. Serve over prepared pasta of your choice and salad. Save any leftovers for a chick-parm Sandwich!
