Ingredients

Any size, good quality beef roast
Salt & Pepper

Instructions

Let roast stand at room temperature for at least 1 hour. 3-4 hours before serving, rub w/ salt & pepper. Place meat, fat side up, in shallow roasting pan. Do not cover.

Preheat oven to 375 degrees. Put roast in oven for 1 hour. Turn heat off for at least 1 1/2 hours. DO NOT open door. Turn oven on to 375 degrees for 30-40 mins.
