Breadstick Pizza Dough by

Ingredients

For the dough:
1 C + 2 Tbsp warm water (270 g)
1 1/2 tsp instant yeast (4.5 g)
2 Tbsp granulated sugar (25 g)
3 Tbsp unsalted butter, melted (42 g)
4 pinches kosher salt
3 C bread flour (468 g)

For brushing (if doing breadsticks):
3 Tbsp unsalted butter, melted
1 pinch kosher salt
1/2 tsp garlic powder
1/2 tsp Italian seasoning

For toppings (if doing pizza):
Olive oil
Pizza Sauce
Mozzarella Cheese
Toppings)

Instructions

1. In the bowl of an electric stand mixer fitted with the dough hook, combine all ingredients for dough except flour.
2. While mixing on low speed, gradually add flour. Once all flour has been added, increase speed to medium and knead dough for 7 minutes, or until smooth and elastic.
3. Turn oven on to preheat to lowest temperature for about 30 seconds.
4. Remove dough to a lightly oiled bowl and cover with a dry towel. Let rise in oven until doubled in size, about 1 1/2 hours.
5 (a). (if making breadsticks) - Divide dough into 12 portions. Roll each piece of dough into a 7-inch log. Place dough logs on nonstick baking mat or parchment-lined baking sheets, cover, and let rise until doubled in size, about 1 hour.
5 (b). (if making pizza) - Turn dough over, punch down, and let rise again for 1 hour.
6 (a). Bake at 400 F for 12 minutes, or until golden brown. Meanwhile, combine butter, salt and garlic powder in a small bowl. Remove breadsticks from oven and immediately brush with butter mixture. Sprinkle with additional Italian seasoning.
6 (b). Preheat oven to 500 F, and move 2 grates to the highest and 3rd highest positions in the oven (need room for cast iron below the pizza). Dust your rolling surface with flour. Using a rolling pin, roll the pizza dough to desired thinness (ensuring it is even). The thinner the better.
7 (b). Either pinch together or fold over the outer edge of the dough to form your crust.
8 (b). Move dough to a parchment paper lined baking sheet.
9 (b). Brush the dough with olive oil. Poke holes all over the pizza dough with a fork to prevent bubbles from forming.
10 (b). Spread your pizza sauce evenly over the pizza.
11 (b). Liberally sprinkle the pizza with mozzarella cheese, and add other toppings. Top with cheese.
12 (b). Once the oven reaches 500 F, heat a heavy bottomed cast iron skillet until it just smokes. Move the baking sheet to the highest grate in the oven. Move the cast iron to the highest possible grate in the oven below the baking sheet.
13 (b). Cook for 13-15 minutes until toppings and cheese are golden brown and crust begins to blacken.
14 (b). Remove from oven, slice, and serve.
