Ciabatta Bread by

Ingredients

2.75 cups All Purpose flour. (350 g)
280 ml warm water
1 tsp yeast
1 tsp salt

Instructions

Pour water into mixing bowl.
Add yeast and salt and dissolve them.
Add flour and mix with dough hook for 6-7 minutes (should be a bit sticky)
Cover bowl with plastic wrap.
After 30 minutes, with water on hands stretch and fold over part of dough, turn 90 degrees and do again for 4 sides...For this time do the 4 folds again, and recover.
After 60 minutes, 4 folds and recover
After 90 minutes, 4 folds and recover
After 2 hours, transfer to floured work surface (large baking pan?)
Pull dough from underneath to stretch to rectangle.
Roll the dough up like a jelly roll from the long side. Pinch to seal edge/
Divide into 3 equal parts, and place each piece on a well floured work surface, leaving some space between them.
Dust with flour, cover with plastic wrap, and rest for 45 minutes.
Preheat oven and a large baking sheet to 450 F.
Gently stretch the dough to form long rectangle.
Transfer to parchment paper.
Slide parchment paper onto hot baking sheet and spray the tops with water, and close oven door.
Bake for 10 minutes, then reduce temperature to 400 deg for another 12-15 minutes.
Don't take out after 20 minutes!
