Homemade Subway Buns 11-12 inch (Five buns) by

Ingredients

1-1/2 cup warm water
1-1/2 tablespoons yeast
1-1/2 tablespoon sugar
2 1/4 teaspoons salt
6 tablespoons olive oil
3-3/4 to 4-1/8 cups all-purpose flour (use 4 cups)

Instructions

In bowl of mixer, add water, sugar, yeast, salt and olive oil.
Let mixture stand for 5 minutes.
Add 1-1/2 cups of flour and mix with dough hook for 3-5 minutes
Add an additional 1-1/2 cups of flour and mix until well combined.
Continue adding flour 1/4 cup at a time, until a soft dough is formed (twice).
Dough should stick to the bottom of the bowl, but pull away from the sides.
Let the dough mix for around 8 minutes total.
Turn out onto lightly floured surface and knead until smooth. Should be very soft.
Shape the dough into ball and return to the bowl, cover with plastic wrap and all to rise for 30 minutes.
Turn out onto a clean surface and divide into 5. Roll each piece of dough into a long skinny loaf about 11-12 inches long.
Place on parchment lined baking sheet, allowing at least 2 inches between each loaf
Cover with greased plastic wrap and proof until doubled, about an hour.
Preheat oven to 350 F.
Bake for 25 minutes
When loaves come out of oven, rub tops with a stick of butter, and cover them with a dish towel to cool (for at least 30 minutes) to keep them soft
