Passover potato knishes by

Ingredients

3 cups mashed potatoes
1 large onion, minced
2 eggs, slightly beaten
2 tbsp margarine
1 tsp salt
ground black pepper
3/8 cup matzah meal
1 egg yolk beaten with 1 tbsp water

Instructions

Preheat over to 400 degrees.
Saute onion in oil until golden. Combine mashed potatoes, onion, margarine, salt, pepper and matzah meal. Taste to adjust salt and pepper. Add eggs. Form into balls and brush with diluted egg yolk. Place on greased baking sheet and bake for 20 minutes or until browned.
