Roasted Smashed New Potatoes by

Ingredients

1 1/2 lbs. small new potatoes ( mixed colors are good)
Sea salt
1/4 cup olive oil

Instructions

Boil potatoes in salted water until tender but not mushy, about 15 min. Place them on a baking sheet to cool off. After 10 minutes smash each potato with the heel of your hand to flatten into an ugly patty. Drizzle each with olive oil. Season with sea salt. Bake for 40 minutes at 425F until crispy on both sides, turning once.
